Mmm, this is my favourite! It is a famous yet common snack in Taiwan. So whenever I'm in Taiwan, I make sure I eat it! The crispyness and taste of it is just divine.
It's fairly simple too: you just marinate chicken fillets (chopped up to small bite size pieces) in soy sauce and sugar (this gives it the lovely sweet flavour) and cover it in Tapioca Starch. Then you just fry it and sprinkle on some spice. You could use chicken salt or leave it just as it is.
